Overview
Learners gaining this qualification will know that fire safety is the responsibility of everyone in the workplace and will recognize the consequences of a fire in any premises.
COURSE OUTLINE
• State the importance of food safety in a catering environment and how to report food safety hazards to supervisors. Recognize that food handlers have legal responsibilities regarding food safety and how to report pest sightings and damage to supervisors.
• State the importance of personal hygiene when in contact with food and identify good personal hygiene practices.
• State the importance of keeping work areas clean in a catering environment and how to keep the work area and equipment clean and the importance of safe waste disposal.
• Identify how food can become contaminated by physical, chemical, allergenic and microbiological contaminants, practices and procedures for controlling contamination hazards from purchase to service of food and state ways to prevent bacteria multiplication and survival.
